Harvest in the early morning hours. Selection from a single vineyard with 60 year old Cannonau and Vermentino vines. The Vermentino undergoes a four-month fermentation in low toasted French oak barrels.

Für den Rosato Lemár werden die Trauben früh morgens zwischen 4 Uhr und 9 Uhr in kleinen Kisten à 10 kg von Hand geerntet. Danach kommen diese umgehend in einen gekühlten Container, um die Kerntemperatur unter 7°C zu bringen. Das verhindert eine spontane Gärung der Trauben und deren Oxidation. In der Cantina werden die unsauberen Trauben auf einem Selektionstisch aussortiert. Ein Vorgang, der bei der Roséherstellung äusserst selten ist.
